Pineapple and Cucumber Salad
Salad Ingredients
- 250 ml (1 cup) cucumbers, diced
- 250 ml (1 cup) pineapple, diced
- 20 leaves of fresh cilantro
- 60 ml sunflower seed
- Dressing Ingredients
- 125 ml (1/2 cup) vegetable oil
- 10 ml (2 tsp) toasted sesame oil
- 1 small garlic clove, minced
- 15 ml (1 tbsp) fresh ginger, minced
- 45 ml (3 tbsp) rice vinegar
- 2.5 ml (1/2 tsp) honey
- Salt and pepper
Directions
- Whisk all dressing ingredients together.
- Combine all remaining ingredients in a bowl.
- Combine with desired amount of dressing.
- Serve.
